Common Names: Szechuan Pepper, Sichuan Pepper, Japanese Pepper
Szechuan pepper is a hardy, thorny deciduous shrub native to Asia that produces the world-famous tongue-tingling spice. Despite its name, it is actually a member of the citrus family rather than a true pepper. Tough, productive, and easy to manage, it brings a unique spice crop to backyard gardens.

Szechuan pepper grows as a multi-stemmed shrub with sharp defensive thorns and aromatic pinnate leaves. Small yellowish flowers appear in spring, followed by clusters of bright red berries that split open in autumn to reveal glossy black seeds. The outer pinkish-red husks are harvested and dried to make the prized spice known for its citrusy aroma and signature tingling warmth.
Interesting Notes:
The famous numbing sensation comes from a natural compound called hydroxy-alpha-sanshool, which acts on touch receptors in the mouth rather than chemical heat receptors.
The young leaves (known as kinome) are also edible, offering a mild citrus and pepper flavor used fresh in soups and garnishes.
